Description

Application of principles of food science and sensory evaluation towards preparation of culturally relevant recipes, with emphasis on food preparation techniques, recipe modification, and meeting nutritional requirements.
Note: not to be taken by students who have previously completed an undergraduate laboratory course in food science and cultural foods.
Prerequisites: CHE 120, 121 & Departmental Permission
